NEWBURGH, Ind. — Stressed out? You’re not alone. Have a wind down at The Wine Down in Newburgh, where you may enjoy a snack or meal with a worldly wine at comfortable, distanced tables or sip a homemade fruit and wine slushie on the patio.
The wine list is drawn from owners Chya and John Colbert’s favorites from around the world. The couple concentrates on smaller producers and more interesting, less mainstream vintages. You’ll find wine from our West Coast states, sure, but also from Michigan, Virginia, Florida, Indiana, Kentucky, Germany, France, Italy, Argentina, Australia, Portugal, Spain, Chile, New Zealand, and South Africa.

The Colberts have been very careful when it comes to playing it safe with COVID-19, and their seating capacity is still at 50%. Nonetheless, they have worked up some exciting new offerings.
Chya, who is also the chef, has expanded the menu, adding items including a barbecue chicken flatbread and a very popular Hot Brown version with a scratch creamy sauce, thick-cut bacon, grilled chicken, roasted tomato and a cheddar-parmesan cheese blend.
“The Hot Brown flatbreads we first did for Derby and everybody thought they were so good,” she said.
The flatbreads accompany a nice variety of wine-friendly munchies including a chopped salad with bacon, cheddar and fried onions; and a spinach salad with boiled egg, pecans and feta cheese in a red wine and bacon dressing.
You may choose a dip with chips or pita, hot beer cheese with soft pretzel sticks, a charcuterie board with cured meats, cheeses, olives, fruit and more.
On Friday and Saturday, Chya has begun offering a special entrée plate.
These began during May as a carry-out option and were very well received.
“I wanted to cook something that was not on the regular menu for carry-out when indoor dining was shut down,” she said. “We sold more to-go food than wine. I’ve kept doing it.”
Chya cooks everything herself and makes whatever she feels like. She doesn’t use recipes (“I just put stuff in there,” she said) and rarely repeats a meal, deciding on Thursday what to make for the weekend depending on what products are available and freshest.
For example, she’s offered Italian chicken with vegetables and pasta, roast beef and mashed potatoes with green beans, pulled pork mac and cheese, baked salmon with sautéed veggies and many others.
“We have a lot of regulars that come every weekend and get the dinner special,” John said. “If someone isn’t comfortable coming inside, they’ll pull up and pop the trunk and we’ll take it out and put it in there for them.”
Another unique and very enjoyable specialty at the Wine Down are the homemade wine slushies, made with real fruit or fruit juice, wine, and water with no added ingredients or extra sugar.
“We started the slushies last year with the bag mixes and they were OK, but I thought ‘what if you want a different flavor, how do you make your own?’ Chya said.
“I decided it would be easier to go out and get strawberries or cherries or lime juice and make our own combinations.”
The juices are mixed into fun flavor combinations and then the Colberts pick a wine they feel will enhance them the most. The wines may or may not be sweet, and are usually lower-alcohol since higher-alcohol wines don’t freeze well.
We sampled the cherry-lime slushie with white wine and a strawberry-pineapple slushie with red wine. Both were delicious and very refreshing on the sunny patio.
The Colberts are passionate about local music and, pre-COVID, welcomed live bands every week; but with hours reduced to Thursday – Saturday and reduced seating capacity, profits aren’t allowing for hiring bands. Still, some musicians are happy to play for tips to give patrons a lovely experience, and fans can watch online and tip that way too. Watch The Wine Down’s Facebook page for music announcements.
